Cowboy Potatoes by Wild Things Ranch

I was introduced to this recipe by some friends, but my family and I have made it our own with twists on it over the years. It has become a tradition when we go camping. Cowboy Potatoes make for a delicious camping meal, but it can also be made in the oven at home. It's a filling dish that will bring back memories of nights out on the range.
Use the ingredients to fill up your Dutch oven— with that being said, I don’t know how many of each ingredient I use… I used a medium Dutch oven in the video.

Ingredients:

Russet Potatoes (approx 4)
Yellow or White onion (1-2)
1-1 1/2 bacon (Wild Things Ranch Kunekune bacon)
Bell pepper— any color (2-3)
Shredded cheddar cheese
Directions:
Take a few bacon pieces and cook them in the bottom of your dutch oven; this will grease the bottom. 
Once the bacon is cooked, start layering all of your ingredients in your dutch oven to the top. 
Cook your cowboy potatoes for 1 hour until the potatoes + bell peppers are soft. Time will depend on how good your coals are.
Once everything is soft, top the cowboy potatoes off with a crap ton of shredded cheddar cheese and MELT.
Dish up and enjoy!
